Keto Beef Stroganoff

Imagine a warm and comforting bowl of beef stroganoff – a classic and cozy meal. We’ve made a keto-friendly version by replacing egg noodles with cauliflower rice. It’s perfect for cold weather and if you’re on a keto diet.

We love beef stroganoff at Delish, especially when it’s cold outside. But if you’re on keto, you might miss out on such meals. No worries, we’ve transformed this nostalgic dish into a keto-friendly dinner. We removed the flour and used cauliflower rice instead of noodles. It’s still hearty and full of rich, beefy flavours.

Not a fan of cauliflower rice? Enjoy this meal alone, or pair it with mashed cauliflower or creamed Brussels sprouts.

Ingredients:

  • 3 tbsp. butter (divided)
  • 1 lb. 80% lean ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 1 1/2 lb. mushrooms (sliced)
  • One garlic clove (minced)
  • One c. low-sodium beef stock or bone broth
  • Four oz. cream cheese
  • 1/2 c. sour cream
  • 2 tsp. Worcestershire sauce
  • 2 tsp. Dijon mustard
  • 1/2 tsp. paprika
  • Finely chopped parsley (for garnish)
  • Steamed cauliflower rice (for serving)

Instructions:

  1. Heat a large skillet over medium-high heat, melt one tablespoon of butter. Add ground beef, season with salt and pepper, and cook until done (about 10 minutes). Transfer meat to a plate.
  2. Return skillet to medium-high heat, add remaining butter and mushrooms. Cook until mushrooms are golden (about 7 minutes). Season with salt and pepper, add garlic, cook for 1 minute. Add broth, cream cheese, sour cream, Worcestershire, Dijon, and paprika. Bring to a simmer, stirring.
  3. Return beef to skillet and stir to combine. Serve over cauliflower rice and garnish with parsley.
